So why is this such a hard question to answer? Because the number of pages you can Saddle stitch together is based on the thickness of the paper you’re using.
At some point, the weight of the paper combined with the number of pages in your project will simply be too thick to Saddle stitch. The pages won’t lay flat, and the staples will want to pull out.
The solution?
For starters, only Saddle stitch sheets that are up to 0.125 of an inch in thickness.
